OK, you asked for it!


Really Fruity Flapjacks



Ingredients

75g (3oz) ready-to-eat dried prunes
75g (3oz) ready-to-eat dried apricots
100g (3 1/2oz) butter,
plus extra for greasing
100g (3 1/2oz) sugar
5 tablespoons honey
75g (3oz) raisins or sultanas
1 banana
2 eggs
375g (12oz) Dorset cereals muesli - flavour of your choice (examples given below)
or, if preferred, a mixture of about 9oz muesli + 3oz porridge oats


Method

Grease a 28cm x 23cm (11" x 9") shallow baking tin, 
or similar. 
 Heat the oven to 180C (350F), Gas Mark 4.

Chop the prunes and apricots into small pieces.
Mash the banana with a fork.

Melt the butter, sugar and honey in a saucepan.
Take off the heat and mix in the muesli, prunes, 
apricots, raisins/sultanas and banana.

Leave to cool for 5-10 minutes then beat in the eggs.

Pour the mixture into the tin and level out.
Bake in the oven for 20 minutes until pale golden, but still soft.
Leave in the tin until cool, then chop up into slices.

Makes about 18.

yum! don't think I'll have time for these this week!!!! but I love new recipes and these look super scrummy. I've never seen a flapjack recipe with eggs? Interesting!

Thank you, Valerie! While fiddling about I somehow managed to delete the old background :o(
My long suffering daughter was tasked with sorting it out, but then I saw this background and loved it's bright summery colours. So then she had to change it all again.

Just as well she loves me!
